2 slices vegan sandwich bread
1 large spoonful hummus
5-6 slices red/green bell pepper
1 small handful pea shoots
5-6 thin slices cucumber
1 small handful baby spinach
toast bread
spread on hummus
top with spinach, then cucumber, then bell pepper, then pea shoots
